A gluten-free diet is one that avoids gluten, as the name suggests. Gluten is a protein found in wheat products which forms the main structure in these products. This diet can be restrictive as many products include gluten, including some that many people wouldn’t expect. A common thickening agent is a roux, equal parts flour and butter cooked to various stages to thicken some soups or sauces with the gluten development.
